I'd recommend halving the cinnamon and cooking for an hour instead of 40 mins. Bar that its affa fine.

I just made a veggie version and it was pretty fine like. Replaced most of the ingredients in the recipe like, but I did put it in the oven for an hour as you suggested.

Nachos, easy on the right fully loaded on the left pre oven  , bottom pic. Fully loaded

 

 

Not a photo of mine (forgot) but made a Mediterranean chicken bake.  Avoided the pesto as the mrs can't have it, but added balsamic vinegar, aubergine and pine nuts with a bit of Thyme from the garden.  Was delicious!
