If they keep winning, and we drop any points between now and then, they'll have won the league already, making it something of a dead rubber. Agreed, you'd have thought they'd want to maximise their viewing audience. I really don't want to see those pricks win it at our place, which is probably want those fuckers want. Put it in as the first game, Celtic win, they then have 4 rounds of matches where there's nothing to play for, so they'd have potentially more dead rubbers than your scenario there. Surely the only input to the fixtures that the TV companies would have is look at the draft list and decide which games they'd like to televise and thus move to Sunday (or Friday or Monday etc.)? If both Celtic and Aberdeen win their next two games, victory for the Hoops in the north east would clinch the Premiership trophy.
